BUlGOGI
Introduction
Bulgogi is one of Korea’s most beloved traditional dishes. Thinly sliced beef is marinated in a sweet and savory sauce, then grilled or pan-cooked to perfection. The word bulgogi literally means “fire meat,” referring to the original method of grilling it directly over flames.
This dish is simple to prepare with just a few ingredients, making it a favorite for family meals, gatherings, and dinner parties. Children especially enjoy its sweet and slightly salty flavor, but it’s a dish that everyone—young or old—can enjoy.
Ingredients
Beef (sirloin or tenderloin) – 300g
Sirloin or tenderloin is ideal since they are tender cuts that absorb the marinade well.1 onion – Adds sweetness and tenderizes the meat.
½ pear – Enhances sweetness and balances the overall flavor.
1 green onion – Adds depth and aroma.
5 button mushrooms – Makes the dish more flavorful and hearty.
3 tbsp soy sauce – The base of the marinade, providing umami.
1 tbsp sugar – Sweetens the dish and balances the saltiness.
1 tbsp sesame oil – Gives nutty fragrance and richness.
1 clove garlic, minced – Enhances flavor and aroma.
1 tsp ground black pepper – Adds mild spiciness and warmth.
Sesame seeds (optional) – Sprinkle at the end for nutty flavor.
Instructions
Prepare the beef:
Slice the beef thinly. Thin slices allow the marinade to soak in better, enhancing flavor.Prepare the vegetables:
Slice the onion, pear, green onion, and mushrooms thinly. When stir-fried with beef, the flavors will blend nicely.Make the marinade:
In a bowl, combine soy sauce, sugar, sesame oil, minced garlic, and black pepper. Mix well to create a balanced sauce. This marinade is the key to bulgogi’s flavor.Marinate the beef:
Add the beef to the marinade and let it sit for about 30 minutes. During this time, the flavors will penetrate the meat, making it tender and flavorful.Grill or pan-fry the beef:
Cook the marinated beef over medium heat. Avoid high heat, as it may dry out the meat. Stir occasionally so it cooks evenly.Add vegetables:
Once the beef is halfway cooked, add the sliced vegetables and continue stir-frying until everything is well combined and the flavors meld together.Finish:
Just before serving, sprinkle with sesame seeds for extra aroma. Bulgogi tastes best when enjoyed hot and fresh.
*Tip: Bulgogi pairs wonderfully with steamed rice and a variety of side dishes (banchan). You can also wrap it in lettuce leaves with rice and a bit of ssamjang (soybean paste dip) for a true Korean experience!
