Introduction

Japchae is one of Korea’s most iconic celebratory dishes, often served on special occasions. It is made by stir-frying thinly sliced vegetables and beef, then mixing them with chewy glass noodles (dangmyeon) and a savory-sweet seasoning.

What makes japchae special is the delightful balance of textures and colors—the soft, springy noodles, the tender meat, and the crisp vegetables all come together for a dish that’s as beautiful to look at as it is delicious to eat. Traditionally enjoyed during festive gatherings, japchae is a dish that never fails to impress guests with its rich flavors and colorful presentation.

Ingredients

  • 150g glass noodles (dangmyeon) – The base of japchae. Soak in water beforehand to reduce cooking time and ensure a softer texture.

  • 100g beef (sirloin or tenderloin) – Thinly sliced and seasoned for deeper flavor.

  • 50g spinach – Adds color and freshness.

  • ½ carrot – Julienned and stir-fried; its crunch complements the noodles.

  • ½ onion – Sliced thinly, adding sweetness.

  • 50g mushrooms – Shiitake or button mushrooms work well, enhancing umami.

  • 1 green onion – Adds aroma and depth.

  • 3 tbsp soy sauce – The main seasoning base.

  • 1 tbsp sugar – Balances flavor with sweetness.

  • 1 tbsp sesame oil – For fragrance and richness.

  • 1 tbsp minced garlic – Enhances overall flavor.

  • 1 tbsp sesame seeds – For a nutty finish.

  • Salt & black pepper – To taste.

Instructions

  1. Soak the noodles:
    Soak the glass noodles in water until soft. Pre-soaking reduces cooking time and makes them tender and chewy.

  2. Prepare the beef:
    Slice beef thinly and season with soy sauce, black pepper, sesame oil, and minced garlic. Let it marinate so the flavors absorb.

  3. Blanch spinach:
    Blanch quickly, squeeze out excess water, and season with salt and sesame oil. This keeps the spinach vibrant and flavorful.

  4. Prepare the vegetables:
    Slice carrot, onion, and mushrooms thinly. Lightly stir-fry each vegetable separately so they maintain their unique textures and colors.

  5. Cook the beef:
    Stir-fry the marinated beef until just cooked through. Avoid overcooking to keep it tender and juicy.

  6. Cook the noodles:
    Boil the soaked noodles until soft, then drain well. Stir-fry with a little sesame oil to prevent sticking and add fragrance.

  7. Combine:
    In a large pan, mix the cooked noodles, vegetables, and beef together. Add soy sauce, sugar, sesame oil, and garlic. Stir-fry briefly so the flavors blend without losing the freshness of the ingredients.

  8. Finish:
    Sprinkle sesame seeds on top before serving. Japchae is best enjoyed warm, when the noodles are soft and the vegetables retain their crunch.

Tip: Japchae tastes even better when prepared in advance and served slightly warm or at room temperature, making it a perfect party dish.
