DAKGALBI
Introduction
Dakgalbi is a popular Korean stir-fried chicken dish made with tender chicken, assorted vegetables, and chewy rice cakes tossed in a spicy gochujang-based sauce. It’s flavorful, hearty, and fun to cook together at the table—often served sizzling in a large pan with melted cheese on top. This dish is perfect for sharing with friends or family, and it never fails to impress with its bold, comforting flavors.
Ingredients
600g boneless chicken thighs or breast
½ cabbage (roughly chopped)
1 sweet potato (thinly sliced)
1 onion (sliced)
1 green onion (cut into large pieces)
2 sausages (optional, sliced)
2 servings udon noodles (optional)
Preparation : sauce
2 tbsp gochujang (Korean chili paste)
2 tbsp mirin (or rice wine)
2 tbsp soy sauce
1 tbsp sugar
1 tbsp minced garlic
1 tbsp minced ginger
1 tbsp cooking oil
1 tbsp sesame oil
Salt and pepper, to taste
Mix everything well to make the spicy marinade.
Instructions
Prepare the chicken:
Rinse the chicken thoroughly, trim off excess fat, and cut into bite-sized pieces. Soak briefly in cold water, then drain.Prepare the vegetables:
Slice the cabbage, sweet potato, and onion into bite-sized pieces. Cut the green onion into 5cm (2-inch) lengths.Marinate the chicken:
In a large bowl, add the chicken and the sauce. Mix well until evenly coated, then refrigerate for at least 30 minutes to let the flavors absorb.Cook the chicken:
Heat a large pan or skillet over medium-high heat and lightly oil it. Add the marinated chicken and spread it evenly across the pan.
Stir-fry for about 4–5 minutes until the chicken starts to cook through.Add vegetables:
Add the cabbage, sweet potato, onion, and sausages (if using). Stir-fry together, mixing well so everything is coated in the sauce.Add noodles (optional):
If adding udon noodles, blanch them briefly in boiling water, drain, and add to the pan. Stir-fry everything together until the sauce thickens and all ingredients are cooked through.Finish:
Lower the heat and sprinkle shredded mozzarella cheese over the top. Cover briefly until melted.
Just before serving, drizzle a bit of sesame oil and sprinkle sesame seeds for aroma.
✨Tips
-Adding grated apple or pear to the marinade gives a natural sweetness and helps tenderize the chicken.
-You can also use rice cakes (tteok) or instant ramen noodles for a more filling version.
-If you prefer less heat, reduce the amount of gochugaru or gochujang slightly.
